The 297-page cookbook about canning food is divided into two parts. It transformed my opinion of this sometimes texturally challenging vegetable and sent me running to the kitchen to try it as a pickle. The more often you do it, the more your initial investment pays off. This makes an incredibly satisfying beginning canner recipe, but experienced canners will make it for years just because it’s so tasty. After some research for recipes, I chose a "Country Mustard" for the yellow seeds and "Oktoberfest Beer Mustard" for the brown seeds. Processing means that jars are filled, leaving the correct headspace, and then heated in a boiling water bath or pressure canner for a specific length of time.
